Olive Oil Production at Villa Ninetta

At Villa Ninetta, we harvest our olives from centuries-old trees. The main variety is Ogliarola, indigenous to Puglia. We only use organic treatment, and the production process is rigorous and intentionally pure. We utilise mechanical cold-extraction, preserving the olives’ natural antioxidants and ensuring an exceptionally low acidity—the primary indicator of a high-quality Extra Virgin oil. The olive oil has a medium fruitiness with balanced bitterness and spice. Typically golden-yellow with greenish hues, this oil features a pleasant almond-like aroma and a smooth, balanced body.
